    A simple seeded rye

This is the easiest loaf we make: no kneading, no shaping, just a tin and some patience.

    Sunflower and pumpkin seeds150g
    Sourdough starter100g
    Water450g

  • The mill behind our flour

    The mill behind our flour

Twelve miles inland, on the river Tamsin, Ford Mill has been grinding grain since 1790. All of our wholemeal and most of our white flour comes from there.

Sacks of stone-ground flour from a local mill

Stone-ground flour keeps more of the wheat’s germ and flavour than roller-milled flour. It also behaves differently every season, which is why our bread changes a little through the year.

    Visiting the mill

Ford Mill opens to visitors on the first Sunday of each month. Tell them we sent you.

Find us at the Saturday market

From this weekend, Sam will be running a Harbour Lane stall at Saltford’s Saturday market on the Quay, from 8am until we sell out.

The stall carries our core loaves and a smaller range of pastries. For the full range, the shop is open as usual from 7am. Directions are on Visit us.

  • Cinnamon buns at home

    Cinnamon buns at home

Our cinnamon buns are the thing people ask about most. This version works in a home oven and makes twelve.

    Ingredients

    • 500g strong white flour
    • 7g fast-action yeast
    • 60g caster sugar and 1 tsp ground cardamom
    • 250ml warm milk, 1 egg and 80g soft butter
    • For the filling: 120g brown butter, 100g light brown sugar, 2 tbsp cinnamon

    Method

    1. Knead everything but the filling for ten minutes, then prove for an hour.
    2. Roll out to a 40 by 30cm rectangle, spread the filling over it and roll up tightly.
    3. Cut into twelve, prove for 40 minutes and bake at 200°C for 15 minutes.
    4. Brush with sugar syrup as soon as they come out.

Roll tighter than feels right. A loose bun opens up in the oven.

  • How we feed our sourdough starter

How we feed our sourdough starter

Every loaf we sell starts with Morwenna, the starter Maya has kept alive since 2016. Here is how we look after her.

    Twice a day

    1. Discard all but 50g of the starter.
    2. Add 100g of stone-ground wholemeal and 100g of water at 26°C.
    3. Leave it covered at room temperature until it has doubled, around six hours.

A starter that smells of nail varnish is hungry. Feed it more often, not less.

  • We’re open on Harbour Lane

    We’re open on Harbour Lane

After eight months of building, plastering and burning through three test batches of everything, Harbour Lane Bakery opened its doors this morning.

Thank you to everyone who queued in the drizzle. We sold out of croissants by half past eight, so we will be baking double tomorrow.

    Opening offer

For our first week, every loaf comes with a free pastry. Opening hours are on our home page.
